## How to enjoy it

Egypt’s Zebda offers generous flesh and a mild, creamy character. Green skin need not mean an unripe centre. Check the shoulders and scent before you cut.

Cut ripe cheeks and scoop with a spoon. Taste the flesh plain before adding it to a dessert.

## When it is ripe

Green skin is normal; wait for a softer body and sweet stem-end aroma.

Flavour notes are subjective. Ripeness, handling and growing conditions change the fruit.

## Butter, in one word

Documented name: the history of the first tree remains unresolved.

Zebda means butter. Egyptian food-history publisher RAWI uses that translation in its account of the country’s mangoes: a small, vivid clue to why a local name can feel more personal than a catalogue number.

The historical record consulted here does not identify Zebda’s first tree or namesake. Its place in Egyptian orchards is well established, and research also records its use as a rootstock. The same fruit can belong to the juice stall, the family table and the nursery that grows the next orchard.
