## How to enjoy it

ST Maui brings pale flesh and an aromatic character that can suggest guava and resin. Let the fragrance develop, then serve simply so those notes remain clear.

Cut ripe cheeks and scoop with a spoon. Taste the flesh plain before adding it to a dessert.

## When it is ripe

Wait for a strong tropical perfume and a soft but not collapsed body.

Flavour notes are subjective. Ripeness, handling and growing conditions change the fruit.

## Two initials, an ocean crossing

Documented name: the history of the first tree remains unresolved.

Tropical Acres’ grower account traces ST Maui through the University of Hawaii’s evaluation programme under the label S-T. Richard Hamilton sent it to Richard Campbell in Florida, where it entered mango collections despite not receiving a Hawaiian recommendation.

The account says the letters are someone’s initials, rather than an abbreviation for “Saint,” but does not identify the person. Proposed Piri ancestry is also speculative. This is a story with a documented route and an unfinished name: two researchers passed a tree onward, while part of its label still needs recovering.
