## How to enjoy it

Langra makes a useful argument against shopping by colour alone. The skin can remain green while the flesh is ripe, sweet and intensely aromatic. Let the scent and the yielding shoulder tell you when to open it.

Open when fragrant, scoop the tender cheeks, and taste the sweet-tart finish without seasoning.

## When it is ripe

The skin stays green; judge by fragrance and a gentle yielding feel.

Flavour notes are subjective. Ripeness, handling and growing conditions change the fruit.

## The grower hidden inside the name

Local tradition: an attributed account, with uncertainty preserved.

The widely repeated naming story connects Langra to a mango tree in the orchard of a man with a walking disability in Varanasi. The Ministry of Food Processing Industries records the account with “it is said”: a useful distinction between the town’s tradition and a proven biography.

Langra is an old term referring to a limp. Repeating the story respectfully brings the person back into view, even though the sources do not preserve his name. Banarasi Langra makes the place explicit: this green-skinned favourite carries Banaras with it.
