## How to enjoy it

Appemidi is a group of aromatic tender mango types from Karnataka’s Western Ghats. These small fruits are valued for pickling while still immature. Their story begins before the sweet, ripe stage: aroma, sourness and a tender stone are what the pickle maker is looking for.

Choose tender fruit for a tested whole-mango pickle recipe. The preserving method, salt and keeping conditions are part of that recipe, not interchangeable finishing touches.

## When it is ripe

For traditional pickle, choose tender immature green fruit; dessert ripeness is not the goal.

The guide focuses on tender green Appemidi used for pickle, rather than ripe dessert fruit.

### Eating it green

Picked tender and immature for whole-fruit pickle. This is its intended eating stage.

Flavour notes are subjective. Ripeness, handling and growing conditions change the fruit.

## The mango remembered by the pickle jar

Documented history: consult the claims and qualifications in the cited sources.

An Appemidi story cannot be reduced to one famous mother tree. At its 2023 diversity fair, ICAR–IIHR described conserving more than 200 Appemidi varieties and honoured five custodian farmers for protecting them. The name opens onto a whole collection of mango diversity.

These are mangoes prized while tender, before a dessert mango would be ready. Their place in a pickle jar gives growers and cooks a reason to remember small differences between trees. The farmers honoured at that fair are part of the origin story still being written: knowledge survives because people keep using it.
