## The country guide

Meet Bizcochuelo, a mango long associated with the Valle del Caney in Santiago de Cuba. A Cuban technical manual describes sweet, juicy, aromatic flesh and notes that its character changes outside that growing area. Alongside it are names such as Filipino, Corazón and La Paz. Their presence in Cuban records establishes an association with Cuba; it does not settle where every mango originated.

## Season and availability

The Cuban technical manual records May–June harvests for Bizcochuelo and Filipino Amarillo, and June–July for Julie. These are cultivar windows from that reference, not a single national season or a live harvest forecast.

## At the table

The same manual describes Bizcochuelo being used both fresh and for processing in eastern Cuba. Our starting suggestion: taste the ripe flesh plain over a bowl and notice its aroma before turning the pulp into a drink.
